Maple syrup holds a special place in Canadian kitchens and in Canadian culture. Made from the sap of sugar maple trees, it takes about 40 litres of sap to produce just one litre of syrup. Most of it comes from Quebec, which produces over 70% of the world’s supply. No wonder it’s considered liquid gold. In fact, it’s so valuable that it was the target of one of the most unusual heists in Canadian history. Between 2011 and 2012, nearly 3,000 tonnes of syrup—worth over $18 million—were stolen from a Quebec storage facility. It was the kind of crime that sounded like a punchline, but the charges were very real.
